I teach regular courses at Denman College the cookery school of the WI, where I cover a huge range of techniques and styles from knife skills to fermentation to classic French to Middle Eastern. I also prepare bespoke courses for private events or individuals. Cooking on boats means building a huge repertoire of techniques and getting to grips with local ingredients wherever you happen to be in the world.
